BBQ Pulled Pork

Dinner oh dinner, how I love and hate thee! As a mom of a five year old (on chemo!) and a two year old, this is how dinner goes in my house. I ask, ask and ask again if anyone has any special requests. The answer is almost always no, so I start throwing out suggestions until I get a “that sounds good.” I make said dinner and surprise, surprise, only 2 bites get eaten. Now, some of you might say don’t ask what they want, just make something. Well I used to do that, but that was even worse. Two year olds are just crazy and five year olds on chemo have a daily fight with their taste buds. We do have two magical meals that seem to get gobbled up every time. One is “special soup” from a local restaurant and the other is my BBQ pulled pork. Now, they won’t eat it every day but if I space it to once every 10-14 days, it is a hit. The best thing about the pork is that it takes 3 minutes to throw it all in the slow cooker and dinner is ready in 8 hours. With the weather getting cooler I love to use my slow cooker, it just feels right!! To start, I always get my meat from a quality butcher. You obviously don’t have to, but good meat really does make a big difference. For my family of 4, with leftovers, I use about 2lbs. of pork shoulder. You can go up to 2.5 lbs without changing the recipe. If you go bigger, than adjust accordingly.The second key ingredient in the BBQ sauce. This is totally based on your preference. Some like sweet, some like smoky, some might want spicy. Whatever you choose, know that this is the flavor your pork will take on. My kids like it a bit more sweet so I normally go for a honey BBQ. You will only be using have a bottle so you will have enough to make this delicious meal, twice!With the two main ingredients covered, here is the recipe:
2 - 2.5 lbs. Pork shoulder
1/2 onion sliced
1 Tbsp paprika
1 tsp pepper
2 tsp salt
2 cloves garlic, minced
8oz BBQ (half of a 16oz bottle)
1/2 cup water
Put all ingredients into your Slow Cooker and set for 8 hrs on Low. When you hear that magical ding and your house smells amazing, shred your pork and Enjoy.Half of our family eats it plain with a fork and the other half puts it on a Hawaiian roll.
